Recently whilst sorting out my groaning bookshelves I came across a tatty folder full of recipes from what now seems like another life – when my brother Duncan and I ran a vegetarian restaurant in Chester called Abbey Green. Looking through my notes I was really suprised. We were always confident that our menus were innovative and ground breaking, confirmed by our loyal customers and the many awards we won including the ‘Vegetarian Restaurant of the Year’. We knew Abbey Green was special but I was amazed how well the recipes have stood the test of time. In this blog I am re visiting many of these dishes and updating where appropriate with ingredients that were not available back in the day (preserved lemons for example!) I have also included many other recipes I have collected over my many years of cooking as a professional, as a mother and cooking for friends. Each dish has been practised, eaten and approved of before being posted and I am confident they will not fail you.. I have a stack of recipes to get through – and I am loving re-visiting these forgotten gems. I hope you enjoy them as much as I have making them.
