Tofu is such a great source of protein and though undeniably bland, it absorbs flavour and adds texture to a dish and is indispensable in my kitchen. Not a fan on TVP myself (ie quorn) tofu is able to add protein and texture to a recipe that retains the integrity of the flavours, without the need to mimic meat – why would you?
Supermarket bought tofu either plain or smoked is fine for this – though if you can get hold of fresh tofu from a deli it does work superbly. Delicious dipped into Tamari Ginger Sauce see here or Satay Sauce see here
The filling for the tofu needs to pack a punch, so don’t be shy with the spices!
