Deceptively easy to make, impressive to look at and delicious to eat!
You will need a greased 23cm flan tin or 24cm x 14cm x 4cm rectangle oven proof dish
Pre heat oven to 190 c
Pear and Almond tart

Ingredients
- 4 fresh pears peeled, or a large tin of pear halves in juice
- 10 floz whipping cream
- 2 eggs and 1 egg yolk
- 3 oz castor sugar
- 100g marzipan
- 1 tsp almond essence
- 1 packet of sweet shortcrust pastry
- 20g flaked almonds
Instructions
- Roll out the pastry and line the greased flan tin. Blind bake in oven for 10 minutes
- Beat together cream, eggs, essence and sugar
- If using fresh pears, peel, core and cut in quarters. If using tin pears remove from juice and pat dry with kitchen paper. Place in the blind baked pastry case
- Take a teaspoon amount of marzipan and roll into a ball. Place the balls around the pears.
- Pour the egg and cream mixture carefully over the pears and marzipan and place in oven without spilling. sprinkle over the flaked almonds
- Bake for approximately 30 minutes until the cream is set, with a slight wobble -it will firm up as it cools. Serve warm or cold with a few raspberrys for a delicious pudding
