French Apple Tart

Instructions

1. Unroll the pastry and cut to a 20cm x 30cm rectangle. Lie flat on the prepared baking sheet. with a sharp knife mark a border 1cm in from the sides. Prick all over with a fork and place in the fridge until required
2. Prepare the apples by first peeling and then cutting in half through the stem. Cut into quarters, remove the core and slice thinly.
3. Arrange the apple slices from the inside edge on the pastry, overlapping in neat rows until used up, and the pastry is evenly covered
4. Brush the edge of the pastry and apple slices with the melted butter. Sprinkle the sugar evenly over the apples, avoiding the edge.
5. Place in the middle of the oven for 45 - 60 minutes, rotating the flan after 20 minutes to encourage even baking. It is ready when the pastry edges are brown and the apple edges are tinged and caramelised.
6. Remove from the oven to cool down and in the meantime warm the jam, adding a tablespoon of boiling water if too thick, and sieve. Brush over the apple slices.
7. Serve with creme fraiche, creme anglais or vanilla cream - all are delicious!
