A an easy sauce that goes with most things – add more stock to turn into a delicious soup
Preheat oven to 200c, 325F
Requires a roasting tin
Roasted Tomato and Red pepper sauce
Ingredients
- 1lb fresh tomatoes or tin of chopped tomatoes
- 1 red pepper, seeds removed and cut in 4
- 2 tbsp Olive oil
- 1 bay leaf
- 100ml stock
- salt and pepper
- 1 onion chopped
- 2 gloves garlic crushed with salt
Instructions
- Cut fresh tomatoes in half and place in roasting tin. if using tinned, empty tin also into roasting tin
- Add the red pepper, bay leaf and seasoning
- Drizzle with olive oil and sprinkle with caster sugar. Place in heated oven for 30 minutes
- Remove the bay leaf and add the roasted tomatoes, peppers and stock. Cook for further 5 minutes to infuse then blitz together choosing a smooth or chunky sauce
