An absolute ‘must’ to accompany any spicy dish. Can be embellished further by adding a tablespoon of toasted dessicated coconut.

Cucumber and Mint Raitha
Ingredients
- 250ml Plain full fat greek yoghurt
- 1 tbsp fresh mint, finely chopped
- or 1 tsp mint sauce
- 6 inch piece of cucumber, deseeded, grated and patted dry on kitchen roll
- tiny pinch of caster sugar
Instructions
- Combine all the ingredients, stirring gently to distribute the cucumber and mint evenly
- Cover with cling film and keep in the fridge until required
- Servings : 4
