Cauliflower, Mustard and Apple Flan

An unusual but perfect marriage of cauliflower and apple, enhanced by the earthiness of djon mustard and absolutely delicious with Spiced Apple ketchup, for see recipe click here

Requires 20cm round flan tin that is 3cm deep

Preheat the oven to 180c or 350F

Ingredients

  • 180g shortcrust pastry, frozen is fine
  • 1 small cauliflower, broken into small florets
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 large dessert apple, cored and chopped in med chunks
  • 3tsp djon mustard
  • 40g plain flour
  • 1/2 pint milk
  • 2 eggs, lightly beaten
  • 1 oz flaked almonds
  • 1tsp dried sage
  • Salt and black pepper to season
  • Sprinkle of paprika

Instructions

  1. Grease the flan tin and line with the pastry, making sure there are no cracks. Bake blind for 10 minutes
  2. Meanwhile steam the cauliflower until barely cooked - about 7 mins. Gently rinse with cold water and pat dry
  3. Heat the olive oil and add the onion, garlic and sage. Saute for about 5 mins or until transluscent but not browned, and add the chopped apple. Continue to cook for a further 5 minutes. Remove from heat
  4. Toss together with the cauliflower and place in the pastry case
  5. In a bowl stir the lightly beaten eggs into the flour and beat together until smooth. Gradually add the milk beating until there are no lumps and finally add the mustard and salt and pepper
  6. Carefully pour the egg mix over the cauliflower and onions. Sprinkle over the almonds and place in middle of oven and bake until set - about 40 minutes
  7. shake the paprika over the top, delicious served hot, warm or cold
