A tea time favourite! I particularly like this recipe as the resulting cake is light but moist with a definite banana flavour – and the recipe works everytime!
Preheat oven to 190c (4-5 gas) and line a 2lb loaf tin

Ingredients
- 110g margarine
- 225g caster sugar
- 1lb whole bananas
- 1 large egg
- 2 tbsp milk
- 225g SR flour, sifted
Instructions
- Using an electric hand whisk, beat the margarine and sugar together until white and fluffy
- Skin the bananas and crush with a fork adding the egg. Beat into the margarine and sugar mixture
- Gently fold in half of the flour and the milk, before adding the remaining flour, keeping the mixture light
- Spoon into a lined loaf tin, and bang on tabletop to settle the mixture
- Place in the middle of pre heated oven to 190c Gas 4-5 for 1 to 1hr 15 mins
