Served individually they make a lovely starter, try with carrot salad for an elegant lunch or with mushroom sauce and piedmont potatoes for a great dinner party dish.

Spinach filled Pancakes

Ingredients
- pancakes (makes 10):
- 2 oz plain flour
- 1 egg, beaten
- 150 ml milk and 1 tbsp water mixed
- salt
- filling:
- 200g washed spinach
- 1 onion chopped
- 1 garlic clove, crushed with salt
- 150g ricotta
- 50g grated parmesan
- 100g single or whipping cream
- oil for frying pancakes
- 1 tbsp butter to saute onions
- 50g flaked almonds
Instructions
- Start with the filling: pierce the spinach bag a few times and microwave for 3 minutes. Remove from bag and dab with kitchen roll to take off excess moisture. Chop.
- Alternatively if not using microwave, chop the spinach and saute in a little butter or oil until lightly cooked, drain in colander and dab dry.
- Saute onion and garlic in a little oil/butter until transparent, not browned. Add to the spinach
- To make the pancakes: Sieve flour into large bowl, add pinch of salt and gradually add beaten egg and milk and water. Beat vigorously by hand or with stick blender until smooth
- Heat a little oil in an 8 inch frying or crepe pan, until a single drop of pancake mix sizzles. Quickly pour in the batter, just enough to thinly coat the base of the pan. Cook gently until golden brown and flip onto other side to continue cooking. First pancake might be a disaster but as you get a feel and the pan seasons they get better! Use the best 4 pancakes for stuffing
- Mix the ricotta cheese with the spinach and put 2 tbsp. of filling into each pancake. You can roll pancakes up into a tube or fold over in quarters.
- Place pancakes in oven proof dish, brush with melted butter and place in oven for 15 minutes
- Mix half of the parmesan with the cream, salt and pepper and pour over the pancakes. Sprinkle remaining parmesan and almonds, if using. Bake for a further 10 minutes.
- Remove from the oven and let stand for a few minutes to settle and firm up. Serve
